If you visit Wisconsin--the nation's biggest cheese producer--this winter, don't be surprised if your snow boots smell a bit like nachos. In December, Milwaukee kicked off a state program to use cheese brine--the salt-and-water mixture cheese is bathed in for flavoring--to help keep its streets from freezing. And not just any cheese: Provolone and mozzarella brine work best because of their high salt content. The program is expected to save money and help the environment: Excess brine will be recycled instead of thrown away; the city will spend less on regular road salt; and the brine helps the salt stick to the road rather than wash away and pollute waterways.
