The days of autumn have started to turn chillier and darker. But, not all is grim, as the chilly weather also brings chances to taste dark home brew, to breathe in the aroma of wood Smoke, and to enjoy those comfort foods that fill and warm us: steaming soups, rustic sandwiches and spices that stoke a gentle heat.
There are all manner of dishes that could satisfy these comfort-food cravings, but it's important they be healthy as well as delicious. And luckily, there is at least one simple ingredient that can help make that happen: tempeh.
Tempeh, a cake made of fermented soybeans, is rich in protein and vitamins, and it can also be easily digested. In addition to its nutritional attributes, tempeh boasts a strong, nutty taste that easily lends itself to the flavors of traditionally meat-based dishes, making vegan and vegetarian options easier than ever. You can add browned tempeh to a pot of simmering chili for a stew that has bite. Or, season tempeh patties with traditional pork sausage spices and pan-fry them at breakfast. Smothering tempeh slices with a sweet, smoky barbecue sauce and then baking also produce; bold results. Whatever your autumnal cravings make you hungry for, tempeh can take it.
Vegan Sausage (Serves 4-6) Ingredients: "Sausage" seasoning: 3 1/4 tbs rubbed sage 1/3 cup salt 1 1/2 tbs sugar 1 tbs nutmeg 1/2 cup red pepper flakes 1 tbs dried thyme 2 1/2 tbs coarse ground black pepper 15 doves garlic, peeled "Sausage" patties: 4 cups cooked grits 2 lbs tempeh, crumbled * 1/2 cup olive oil Instruction: In a food processor, grind dry seasoning ingredients with garlic until a paste is formed.
