Subway restaurants chose a wild Alaska salmon sub sandwich recipe submitted by Anchorage's Ellen Cole as its new salmon sub. Cole is a professor at Alaska Pacific University. The sub combines toasted Italian herb and cheese bread, wild Alaska salmon, provolone cheese, tomatoes, red onions, olives, oregano, bacon, spinach and sweet onion dressing.
