Two new dishware sanitizers have been found to be more effective at removing bacteria from restaurant dishes than traditional sanitizers, reflecting the industry's recent efforts to develop more effective germ killers that also are environmentally friendly, maintains a study published in Food Control The pair of sanitizers--one called Pro-San and the other Neutral Electrolyzed [Oxidizing] Water--not only prove more effective, they contain fewer toxins.

Traditional sanitizers used by restaurants contain chemicals found in bleach, which can corrode dishware, damage the environment, and irritate or bum the skin. Such sanitizers also lose their effectiveness with each additional wash cycle. This means that the killing agents within them destroy fewer amounts of harmful bacteria with every rinse.
