After working at New Belgium Brewery during the micro-beer boom, the husband-and-wife team of Robert Poland and Birgit Halbreiter went into the cheese business in 2001, heeding the advice of Halbreiter's father, a master cheesemaker in Germany. Their MouCo Cheese Co. makes two varieties--a Camembert and ColoRouge, a "red-smear" cheese that took home a gold medal from the 2004 American Cheese Society Conference.
