Some ideas to entertain: how to host a memorable party.

Dr. Lonnie Paulos of Salt Lake City often lets a caterer plan his holiday and birthday parties. He usually chooses from a stock list of themes that can include Caribbean BBQ, Three Ring Circus Party and Safari Through the Jungle, but a recent trip to Cuba provided some zesty food ideas that he says will influence one of his future soirees.

People are planning their entertainment according to the places they've been. "We watch the travel industry closely to see what our next party requests will be," says Maxine Turner, president of Cuisine Unlimited Catering Service and a frequent event planner for Paulos and other clients throughout Utah and the United States. "People are traveling more, and they want to bring those experiences back home to their family and friends." Turner and her team use this knowledge to add new twists to traditional themes: they infuse their Mexican Fiesta with Brazilian traits, haul in sand for the Beach Party, and hold Casino Night parties in Monte Carlo (yes, that Monte Carlo).

Of course, Utah is the destination for many travelers. Caterers serve residents who invite friends from out of state for a touring event. Gourmet Catering is a full-service caterer specializing in planning these destination events. A client who flew in six close friends for a long weekend of exploring northern Utah made a typical request. Gourmet Catering arranged all lodging, transportation and dining for the group, and provided a sample itinerary that allowed time for spur-of-the-moment activities. The hosts were free to act as guides and enjoy the company of their guests, a primary reason many rely upon a caterer.

Current events also influence the scope and flavor of entertainment. The 2002 Winter Olympics were a boon for local caterers, resulting in new levels of creativity and exposure. The Games dominated the entertainment budgets of many companies and individuals this year, but 9/11 and the economy have also impacted how people choose to direct their dollars. According to Turner, whose scope of operations allows her a perspective on both the Utah and national markets, local entertaining is defined by budget, while extravagance sets the tone in bigger markets. She sees a trend in Utah of smaller parties that maintain quality while providing a personal, unique experience for friends and family.
