The U.S. produces 88 billion table eggs a year. As consumption grows, so does concern over the quality of life of the hens that lay the eggs--at least in some parts of the country. Cage-free hens now represent about 16 percent of U.S. chickens. But after lawmakers in California and Massachusetts enacted laws requiring that chickens be raised cage-free, 13 states sued, saying the laws violated the commerce clause of the U.S. Constitution.
