Eat right for a happy holiday.

A beach, a Margarita, and fresh shrimp are vacation highlights for many people. However, one piece of bad shrimp can make you sick and ruin your whole holiday, warns Mary Ann Schroeder, a professor of nursing at The Catholic University of America. "Tasting local food is as much a part of vacation as touring landmarks. But travelers can avoid illness, and enjoy their vacation to its fullest by keeping these tips in mind":

* Avoid eating shellfish that may have lived in contaminated waters, especially in countries where sanitation may not be good. * Do not eat raw vegetables or drink any unbottled water. Microorganisms found in soil and water can cause diseases such as dysentery and typhoid. Examine bottled water closely; if the seal is broken, don't drink it. The water you are served may be from the local pump. * Make sure all fish and meat are well-cooked. Stay away from local dishes that feature uncooked fish and meat. It is safe to eat anything that you can peel, like oranges or bananas. The rind seals the fruit from organisms that cause disease. * Do your research.
