Chocolat Michel Cluizel--the 100-year-old family-owned French "bean to bonbon" producer--with its wide range of fine pure chocolates, falls into the latter category.

Among our favorites are the Summer Macarolats ($26 for 11 piece box). Inspired by the classic French macaroon, these treats feature a rich praline blended with white chocolate fruit ganaches, enclosed in 37% milk chocolate. The roasted and caramelized almonds and hazelnuts are crushed by stone, so you won't find any off-taste caused by common metal crushers. The Macarolats are available in lime, raspberry, and passion fruit.

A surprisingly informative experience comes from a box of Le Nuancier des pures Origines du Monde ($40/box of 70 coins). This tasting box of dark chocolates (67% and 72% cocoa) is made from cacao beans exclusively from seven countries: Venezuela, Ghana, Madasgascar, Java, Sumatra, Grenada, and Ecuador.
